描述
Xanthan gum is a polysaccharide (sugar) secreted by the bacterium Xanthomonas campestris. It is frequently found in food as a thickening agent and is used in cosmetics as a thickener and stabiliser, where it helps to prevent emulsions from separating. It is produced by the fermentation of glucose, sucrose, or lactose. After a fermentation period, the polysaccharide is precipitated with isopropyl alcohol, dried, and ground into a fine odourless powder which is how it is sold.
Xanthan can be purchased in two forms, transparent and non-clear. They both work well in aqueous bases, the difference will be aesthetic. Like with other gums it is best blended with glycerine first and then added to the water to avoid clumping. If glycerine is not used, try to create a vortex first and sprinkle the gum into it. This is best done with magnetic stirrer but can also be done by using a glass rod. Gels created with xanthan tend to thicken a bit more over time. A natural gum made from the fermentation of sugar.
It is highly recommended to start at a low percentage when working with gums to thicken or stabilise a formula.
